Food Safety Information Note for Cold-Smoked Salmon Producers November 2021

The Sea-Fisheries Protection Authority has published a Food Safety Information Note for Cold-Smoked Salmon Producers.

This publication was produced in consultation with the Food Safety Authority of Ireland (FSAI) and  Bord Iascaigh Mhara (BIM).

It deals with potential food safety hazards associated with cold-smoked salmon production. It provides an overview of some key legal requirements and food safety recommendations.

It also includes a section and checklist covering the labelling of cold-smoked salmon.
